Menu Plan: Winter (Feb. 10-16)



Breakfasts
- Egg Sandwich (scrambled eggs &  cheddar cheese on toast), grapefruit
- Winter Oatmeal (oats, diced apple, flaxseed meal, cinnamon, chopped walnuts, drizzle honey)
- Egg & Veggie Omelet (eggs, swiss cheese, diced tomato, sliced mushrooms, diced bell pepper, S &P to taste), toast, orange
- Toast with peanut butter and diced apples 

Lunches
- Oven "fried" chicken, smashed potatoes (blending in cooked cauliflower & parsnip), broccoli
- Veggie calzones (whole wheat pizza recipe + any veggies on hand (peppers, olives, mushrooms, onions etc. + cheese)
- Chicken enchiladas (homemade tortillas + rice + corn + chicken shred + enchilada sauce + cheese), black beans
- Salmon cakes, asparagus
- Egg souffle with asparagus

Dinners
- Chili
- repeat chili
- Dandelion greens with salami (Hubby's creation)

Snacks
- Pecans
-Carrots
-Yogurt
-celery with peanut butter
-Cottage cheese with strawberries
-Banana with peanut butter
-Cheese slices
